Bill and Cami Davis are self-taught vintners that own and operate the winery with Cami’s brother Todd Eilert. Elevage Wine Company’s mission is “We Must Create!” and that they do. A quirky combination of classical meets rock and roll, their passion for wine, food, and the arts comes together masterfully. They unveiled their first commercial wine release in May 2010. It was their “Peace, Love and Merlot” 7 Hills Merlot from grapes sourced in the Walla Walla Valley. A love of wine was passed down from Bill’s father. His passion for all things viticultural instilled a desire to create wine in his name following his passing.
They sport several varieties each year, all boasting clever names like “Rebels of a Vine” and “Youthfully Disciplined”. They earned a double gold in their very first competition for their Cabernet Sauvignon; made with grapes sourced from the family owned Stone Ridge Vineyard. At the 2015 San Francisco Chronicle Wine Competition they earned several awards: Gold for their 2012 Bad Moon Rising and Bronze for their 2012 Cabernet Sauvignon and 2012 Malbec.
They opened Brix by Elevage Wine Company as a unique tasting room of sorts. It is an architecture-rich wine bar located in historic downtown Ellensburg Washington. At Brix they celebrate eight of their own wines under the “Raised by Wolves” label and wines from 30 other local wineries and beers on tap. They have a menu filled with delicious unique pairings such as “crawdads”, pizza, salad and fondue. They serve several vegetarian/vegan dishes as well. The interior walls are full of an artistic take on their logo and assorted hieroglyphics that surround you with an “it’s always wine o’clock” feeling. They feature special event several times a year including an annual Crawfish Feed.
Visitors boast it’s “fun, classy and comfortable” with great service and ambiance. Street parking is plentiful and attire is casual to enjoy a date or night out with friends. Peruse the frequently changing wine selection and make bold tasting choices to discover some truly wonderful and unique wines from local boutique wineries. Live jazz and acoustic music is typical on the weekends and they have an adorable street side patio to enjoy a comfortable evening.
They also own and operate Matterhorn Cellars tasting room in Leavenworth Washington. Here they offer wine tastings for $5 per person of local wines including their own label. Located in the cellar, it’s a nice cool place to visit on a hot summer day.
